Composting: Using New Technology To Cut Down On Food Waste Issues


One of the sustainability initiatives Willowbend has undertaken in 2024 is how to reduce food waste and cut down on the issues caused by food disposal. The answer? Composting. Throughout 2023, we explored various approaches to divert our food waste from landfills through composting. Composting is highly impactful because approximately one-third of all human-produced methane in the US comes from landfills. Diverting even just 25% of organic food waste sent to landfills to composting facilities can reduce associated greenhouse gas emissions by 30%.

After thoroughly investigating options, from on-site processes and commercial composting services to new technologies, Willowbend has found an excellent solution that fits within our existing infrastructure, is cost-effective, and will help protect the planet. We have partnered with BioGreen360, a company that provides an innovative approach to food waste diversion. They will install specialized equipment in our kitchen that processes food waste into an organic material. BioGreen360 then collects this material to create high-quality fertilizer, forming a truly circular system that will significantly reduce the Club’s methane footprint. Their equipment also tracks waste volumes, providing valuable data to our food and beverage team for identifying efficiency opportunities. 

By adopting composting technology used by renowned hospitality groups like Ritz Carlton and Marriott, Willowbend is taking a meaningful step towards more sustainable operations. Ultimately, initiatives like this aim to reduce our environmental footprint and have a positive impact on our community. Composting is an example of how we can embrace innovations that transition us toward being more efficient and environmentally conscious.
